Greeted with a glass of chilled Champagne and a cold towel, our excited trio soon felt relaxed after their long journey, and were ready to be shown to their Ocean Suite. Wow, what suites they sound; not only are they reserved exclusively for adults at the quiet end of the beach, but their clever split-level design means that stunning ocean views can be had even from the comfort of the beds – a heavenly thought. Also a heavenly thought, is the delicious pre-dinner rum cocktails the girls savoured at Coconut Grove, before their dinner at Indigo on the Beach where the Tuna Tartar was served just as it should be – soft in texture and packed with delicate flavours, the roasted Mahi Mahi was cooked to perfection and the chocolate dessert was simply divine. As the girls all agree, ‘you have to do your best to try a bit of everything on these trips’... and you won’t find us arguing with that!
Fantastic food was definitely a recurring theme their trip and the next, a hearty breakfast of Eggs Benedict and the smoothie of the day, supplied more than enough ‘fuel’ for a snorkelling trip. Whisked away on a twenty-minute journey aboard the hotel’s motor yacht to the shallow, clear waters of the reef, the girls were soon swimming amongst the most beautiful-coloured fish and they even spotted some stingrays that were trying their best to hide. Afterwards, they sailed along the coast to an unspoilt beach for a stroll, before hopping back on-board to devour a sumptuous buffet lunch. On their return to Carlisle Bay they were welcomed with a trip to Blue Spa for a blissful West Indian Massage – we’re sure they’d have been forgiven for falling sound asleep! But, just as well they didn’t because, believe it or not, the day was about to get even better. That evening they joined the Chef for a private dining experience and enjoyed fantastic Tuna Ceviche that was prepared for them, from scratch, right before their very eyes. (Despite this, Caroline – a true devotee of all things seafood related – confesses that she still can’t quite get the dish right herself!)
The next, and final, day at Carlisle Bay started, (a little competitively if the truth be told!), with a sailing race around some carefully placed buoys. Simple... or so you might think! Caroline, Anna and Mandy thoroughly enjoyed it... and so did the guests who had gathered on the shore to watch their comical efforts! The girls also enjoyed the superb Beach Attendant service – if you can’t bear to move from the sands, a Bento Box can even be delivered to your lounger! However, it would be a shame not to try the complimentary water sports including stand-up paddle-boarding, which we’ve been assured is surprisingly easy! Ready for some sustenance, that night the girls dined at the fabulous Pan-Asian restaurant, East, on what can only be described as a feast, with everything from Sushi and spring rolls, to Thai fishcakes and Malaysian curries. Contentedly full, they retired to the Pavillion Bar for a night cap – they highly recommend the Apple Martinis!
