A coloured concoction comprising fruit jelly, sugar and a medley of exotic ingredients, the soup is a pleasure for the eyes and tastebuds. 

Cities

There is so much going on in Ho Chi Minh City, and so much history to unearth, that it can be an overwhelming task to know where to start. Ponder this over a big glass of Bia Hoi, the locals' favourite home brew. This hearty lager was first introduced by the Czechs and drinking it still remains a hugely popular pastime. If you crave to see remnants of the Vietnamese War, head seventy kilometres out of the city to the tunnels of Cu Chi. These exceedingly claustrophobic underground walkways were used by the Viet Cong to sneak up on US troops and can now be accessed by tourists – an incredible experience if you don’t mind dark, cramped and damp spaces. For a more relaxing excursion, ascend to the rooftop bar of Rex Hotel which also serves a good menu of Vietnamese and Western specialities. It was here that ‘five-oclock follies’ were held during the war; a term coined by journalists to describe the hotel’s daily press conferences.
